Instructions

1. Make the Crust:

  1. In a food processor, pulse the flour, ground pistachios, and powdered sugar until combined.
  2. Add the cold butter and pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and ice water, pulsing until the dough just comes together.
  4. Shape into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  5. Roll out the dough and press it into a 9-inch tart pan. Chill for another 15 minutes.
  6. Preheat the oven to 350°F (175°C). Prick the crust with a fork and bake for 15 minutes or until lightly golden. Cool completely.

2. Prepare the Lavender Cream Filling:

  1. In a small saucepan, heat the cream, milk, and lavender over low heat. Do not boil—just warm for 5 minutes. Remove from heat, cover, and steep for 10 minutes.
  2. Strain out the lavender and return the infused cream to the saucepan. Stir in honey.
  3. In a separate bowl, whisk egg yolks and sugar until pale.
  4. Slowly pour the warm cream mixture into the egg mixture, whisking continuously.
  5. Return everything to the saucepan and cook over low heat, stirring until slightly thickened (about 5 minutes). Remove from heat and stir in vanilla extract.

3. Assemble & Chill:

  1. Pour the lavender-honey custard into the cooled tart shell.
  2. Refrigerate for at least 2 hours until set.

4. Garnish & Serve:

  1. Sprinkle with crushed pistachios and edible flowers.
